Cranberry Orange Muffins

I had the amazing opportunity to spend the last better part of a week in L.A. for the 2012 Magnet Nursing Conference.  It was incredible and the single most reinvigorating event of my career as a nurse.  I was surrounded by 7,000+ nurses who were there to celebrate nursing excellence and to learn how to continue that excellence.  There were so many inspirational moments I can't even begin to choose a stand out.  There was also a lot of really informative sessions about what the nursing community is doing, so educational.  I can't wait to bring this back to my hospital and start sharing all that I learned.  (Pictured are the amazing nurses from my hospital I had the opportunity to share this week with.)
When I got back from L.A. I was greeted by my husband.  It was the longest we had been apart in a long long long time.  While I was gone he attended a conference regarding employee ownership at a local company here that you may have heard of, King Arthur Flour.  Jesse of course knows how much I love to cook and bake so he picked me up a couple presents from their store.
They have an amazing store here.  We went to visit it today and walked into the most amazing smells!  For anyone who enjoys baking it is an absolute mecca.  Jesse had to pretty much pull me out of there.  I informed him I wanted to live in the store forever.  People come from all over to visit, someone even rode their motorcycle from California!  Here is a picture of a bit of the dining area around their sandwich counter.  

Well anyway, one of the gifts Jesse got me from King Arthur Flour (I think it was also kind of a gift for him and I hint for me...haha) was their Cranberry Orange Muffin mix.  Doesn't that look like it's saying "BAKE ME NOW?!"  Yes, yes it does.  So I did.  I woke up this morning and set out to bake them.  We were low on butter replacement so I decided to use the oil option and I also decided to use orange juice instead of milk.  We were shy 1 egg though.  Jesse offered to run to the store and get eggs so I took him up on his offer (you know me, I hate running out for that one stupid ingredient I don't have!)  I could tell he really wanted the muffins when he offered to do this :).

So when Jesse got back I got back to baking (the easy premixed way).  The simple easy to follow directions are nice and clear on the back of the box.  While these were baking away Sally (Jesse's mom) shared a great idea with me via Facebook.  She melts butter and adds cinnamon to it and dips some of her warm muffins in it for a yummy yummy muffin crown.  I decided to melt some butter substitute and add some sugar in the raw.  When the muffins came out I spread this over the top of the muffins.  Jesse loved it!

These muffins came out so deliciously.  I'm definitely going to keep a box on hand for when company comes over.  What an easy but tasty way to make a guest feel at home!
