Raspberry Sauced Chicken

Before working a night shift I like to eat lighter...I feel like my body gets confused and just starts storing everything.  Lighter can mean boring but hopefully not in this case.  I found a recipe online for raspberry glazed chicken...BUT...I don't have any of the ingredients so I'm going to wing it.


  • One serving chicken breast
  • 1 tablespoon chicken broth
  • 2 tablespoons raspberry preserve
  • 1 tiny shake oregano
  • 1 tiny shake basil
  • 1 tiny shake cilantro
  • fresh greens for salad
  • 1 fresh carrot
  • 1 celery stalk
  • salad dressing of choice (I'm using poppy-seed)

  • Preheat oven to 375F
  • place broth, preserve, oregano, basil and cilantro in a bowl and mix
  • slather all over chicken and then place on sheet for cooking (I also spoon over the extra stuff onto the chicken)
  • cook chicken for 12-15min
  • make a salad and chop your celery + carrot and add (and really whatever else you want in there...this is just all I had today)
  • chop up chicken and add to salad
  • pour on a serving of your salad dressing of choice :)
So first of all I meant to eat this with just broccoli.  I removed my broc from it's bag and went to chop it and discovered that my delicious looking broc was hiding one ugly sibling under it's canopy...ew!  I don't know about you but I just can't eat it if it touched something unsavory...or I'm just weird.

The chicken was moist and sweet.  It was a winner but I would definitely would rather have not put it in a salad.  I think this would have been stellar with the chicken breast kept by itself and paired with a nice light side.
