Making Whoopee! promised: Whoopee Pies!!!

Remember!  You non-lactards will like this stuff too and if you choose to make it with dairy you totally can.


Whoopee Pie Cakes:
  • 2 cups flour
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 & 1/3 cup sugar
  • 1/2 cup dairy free cocoa powder
  • 1/2 cup organic shortening
  • 3/4 cup organic soy milk (almond milk...for those of you avoiding soy, Lactaid, coconut milk or regular milk...what-evs)
  • 1 teaspoon vanilla
  • 3 organic eggs
  • 4 cups confection sugar
  • 1 cup organic shortening
  • 1 teaspoon vanilla
  • 2 egg whites, organic
Flavor Filling:
  • organic berry preserve, your choice


Whoopee Pie Cakes

  • Pre-heat oven to 350F
  • Mix all the ingredients together like a science project
  • Mix until thoroughly combined
  • Glop, by the heaping spoonful, onto a greased cookie sheet with very generous space between glops
  • Let cook approximately 10 minutes
  • Remove and place on wire rack
  • Mix all ingredients together until fully combined
  • Slather generously over bottom of whoopee pie cake and place top cake in place
Flavored Filling (for 3 flavors)
  • Separate your filling into 3 dishes
  • Add flavored berry preserve of your choice (5 oz)
  • Add an additional 1/2-1 cup of confection sugar (till the correct consistency)
Can we just talk about how awesome this is?  It's also super fun!  As I mentioned in the video this is Stephanie's grandmother's recipe which I have altered to be lactose free.  Dear Steph:  I love you and I hope this makes you feel better about being a Lactard!  Welcome to the madness!

P.S.  I tried to set my oven on fire but only succeeded in making the apartment slightly fire alarms were set off (thank you for small miracles).  We shan't discuss how I tried to do this...dumb dumb dumb moment (*cough* wax paper on cookie pan in oven *cough*)
