Chocolate Peanut Butter Morsels

I FEEL LIKE I CAN CONQUER THE WORLD!  I don't know if I have ever been so excited about something I have made in the kitchen...ever!!  Peanut butter + chocolate = best combo in existence.  My favorite candy is dark chocolate Reese's peanut butter cups soooo guess what I made?!

CHOCOLATE PEANUT BUTTER EGGS!!!

DUN DUN DUN!!!

Really easy to make B.T. dubs.

Ingredients:

  • 4 cups powdered sugar
  • 1/4 cup Earth Balance vegan spread (butter replacement)
  • 1.5 cups creamy peanut butter (I found a Smuckers kind that was literally just peanut butter, it needed to be mixed because the oil separates a little but it is really yummy)
  • 3 tablespoons smart balance milk (it's lactose free)
  • 3 cups semi sweet morsels (remember the Ghirardelli ones are lactose free)
  • 1 tablespoon shortening
Directions:
  • Combine powdered sugar + peanut butter in mixing bowl.
  • Melt Earth Balance "butter" and add to the peanut butter mix
  • Mix all together and slowly add milk one tablespoon at a time
  • Once the mixture has reach the consistency of play dough (fresh play dough not the dried out old stuff) shape into whatever shape you want and place on a tray
  • Put tray in freezer for 1 hr
  • After 1 hour put the chocolate morsels and shortening in a microwavable bowl and one minute at a time heat + mix until melted completely (if you microwave more than 1 minute you might burn the chocolate)
  • Dip peanut butter shapes in chocolate and place on wax paper, allow to set.
    • use something sharp to stab peanut butter shapes and dip...it will make it a lot easier than the spoon I used...haha
I will be bringing these to work with me tonight...Pediatric Intensive Care Unit staff be warned :)

I enjoyed mine with a little bit of Lactaid Vanilla Icecream O:-)  Jesse told me they were banned from the house but that it was a recipe I should definitely hold onto (That means he loved them but he didn't want to get fat haha)
