Kelley Egg Omelet

Tonight I'm facing several dilemmas: 1. I'm sick and I've hurt my shoulder so in general I just plain don't feel good at all. 2. I'm bored but not at all ambitious.

To answer the boredom problem I thought I would do a little something for the blog...but then I realized I had absolutely no desire to do anything involving any mixing (shoulder) and being sick my energy is pretty darn low.

Then I became hungry and to my dismay Jesse and I don't have much of anything ready to eat.  Then I saw them: the farm fresh eggs from my friends Shannon and Jeff.  AWESOME OMELET TIME.

2 eggs + splash of soy milk, stir a little and then start it a cooking
fresh spinach
Cabot extra sharp cheddar cheese (remember: Cabot=lactard safe)
(I would have loved a sweet onion in this but I didn't have any)
sprinkle on some minced garlic (I used a heavy sprinkle :-p, I love garlic)
sprinkle on ground up rainbow peppercorn (light sprinkle...or dusting...not as much a fan of peppercorn)

This came out better than I thought it would.  IT WAS AWESOME.  So happy with it.  I've always been a bit more conservative with omelets but this I think is going to be a springboard to experiments.
My recommendation: MAKE THIS!
