Original recipe can be found here: http://www.bakingserendipity.com/
1/2 cup butter --> "Vegan butter" not "butter" spread
1/2 cup sugar
1/2 cup brown sugar
1 tsp vanilla
1 tsp red food coloring
1 1/2 cups flour
1 tsp baking soda
1/4 tsp salt
1/3 cup cocoa powder
1/2 cup semi-sweet chocolate chips
Cream butter and sugars. Add egg and vanilla, mixing well. Beat in food coloring. Stir in flour, baking soda, salt and cocoa powder until just combined. Fold in chocolate chips. Drop by rounded teaspoon onto an ungreased cookie sheet and bake in a preheated 375 degree oven for 10-12 minutes. Let cool slightly before transferring to wire racks.
Admittedly this one should be a pretty easy start. I already have a good vegan butter substitute that I have used before. It just sounded so yummy I had to give it a try!
What I thought I had but didn't: Vanilla....two trips to the grocery store. My favorite...
BUT IT WAS WORTH IT! YUMMY!!!! These came out SO good. Very fluffy. The heavy amount of powder ingredients worked well with the more oily vegan butter for a great consistency! I hope there are some left for when J gets home at 11 from work!!! O:)
P.S. This is definitely lactarded milk
