Maple Cream Pie

This is a very early am post because I woke up a half hour before my alarm...boo! Regardless I hope everyone had a wonderful Thanksgiving. I know I did!

I made a Maple Cream Pie from my manager's recipe. I'm not going to post the recipe because I don't know if he would be okay with that but I will tell you how it went!

First of all had a problem with the crust right away but not from any lactose issues. I went to bake the single crust empty and it collapsed in on itself becoming totally useless but becoming nice and firm and crisp. Secondly with the second crust it didn't bake enough and became soft when the maple cream was poured into it. Argh. Oh well. Next time I will try something different.

I did have a happy surprise though. Lactarded milk comes in whole milk! The recipe calls for whole milk and a large amount of it. I was really worried that I wouldn't be able to find anything that would act like whole milk or rather...be able to figure out the ratio of whole milk to replacement. Easy solution though! The only thing I might do is just use a tad less. I also think the lactarded milk takes longer to firm up.


Finally the last problem with THIS pie. It needs to be refrigerated. I did and it firmed up nicely but then if it's not continued to be kept cold it turns into more of a pudding. It did taste very yummy but it is very very sweet so a very small piece is all you need!




There was an EPIC fail associated with this pie.  Whipped cream (lactose free).  I found several recipes and the one I decided to start with (because I had the ingredients) did NOT work.  It was fun though.  The whole thing just turned into a cloud.   White tinny bubble filled fail.

Oh well, better luck next time!
